Denver — The team behind Denver's famous Rosenberg's Bagels and Delicatessen is opening a New York style pizza joint.
Famous Original J's Pizza opens in the Five Points neighborhood on Friday, next door to the original Rosenberg's location.
Rosenberg's has long been known for making bagels that have a true New York flavor, which they say comes from using 'New York water' (Basically, they filter out all of the minerals from the water and then reintroduce the ones that would be found in New York).
The new pizza place will go for that same authenticity: using San Marzano tomatoes, whole-milk mozzarella, Taylor ham and the same adjusted water in the crust.
Mat Shumaker, a longtime chef at Rosenberg's, will head the kitchen at Famous Original J's. Shumaker has also worked at Fat Sully's and Denver Biscuit Company.
Pizza will be available both by the slice or whole pie in two styles found in different parts of New York. The classic round pizza Famous Original J's will offer is the traditional New York-style most people are familiar with. They will also have a square pizza, which they call Grandma style - that is inspired by thick-crust pies, topped with cheese and then sauce found on Prince Street in New York's Little Italy.
The menu will also have a vegan option with dairy-free ricotta.

Sunday 5 p.m. - close (whenever people stop coming)
