Crews closed the road in both directions around 7:30 p.m. as they worked to clean up the mess for just over two hours.
The driver of the truck was airlifted to a nearby hospital. There was no word on the extent of his injuries.
Colorado State Patrol says the truck was the only vehicle involved.
The truck may have swerved to avoid cows in the road that were reported in the area before the crash.
The CSP Hazmat team was on scene, but the molasses spill is not considered to be a hazardous material situation.
A spokesperson from CSP was unsure how the sticky substance would be removed from the road.
