Farmer's Market favorite: Fresh corn & cotija salad

KUSA - Corn is our pick of the weekend at your neighborhood Farmer's Market.

Jackie Carioscia, a Pillsbury Bake-Off Contestant from Castle Rock, shows us what's hot at the Farmer's Market:

Fresh Corn and Cotija Salad

3 ears of fresh corn
1 roma tomato, diced
2 oz of hard cotija cheese, crumbled
2 tablespoons fresh cilantro, chopped
2 tablespoons mayonnaise
2 teaspoons lime juice
ΒΌ teaspoon Mrs. Dash fiesta lime seasoning
1 avocado, diced

Shuck the corn, and cut the kernels off the cob (this should be about 3 cups of corn kernels). Place the corn kernels in a large bowl, along with the diced tomato, cotija cheese, and cilantro. In a small bowl, mix together the mayonnaise, lime juice, and seasoning. Pour the dressing over the corn, and stir to coat. Finally, stir in the diced avocado. Once the salad is well mixed and evenly coated, serve the salad.
