After a half-year delay, Elise Wiggins' first solo restaurant opens in Denver

DENVER BUSINESS JOURNAL - Elise Wiggins was set last fall to open Cattivella in Denver, the first restaurant that the celebrated former Panzano executive chef has owned, when the curse of slow-moving construction became a surprise blessing for her.

Having set aside only enough money to last through October before bringing in new income, Wiggins found herself turning to catering while she waited for meaningful construction to commence on the Eastbridge project in Denver’s Stapleton neighborhood that will be home to both her eatery and others. And in doing so, she began to try out her planned recipes and to look at ways of making dishes more quickly and easily.

When Wiggins finally throws opens Cattivella’s doors for happy hour at 4 p.m. Wednesday, the menu will reflect her extra months of preparation and learning.

Dry-aged steaks will be topped only with salsa verde to bring out their flavor, and other items will be brought from stove to plate with simpler steps that aid the chefs.
