Celebrate mother with an easy and tasty brunch on her day. Serve her crepes, egg muffins and spa water.
Crepes are a light option that can hold some savory or sweet ingredients. They can be made a day in advance and stored in the fridge in between sheets of wax paper. When ready to eat, reheat in a pan and top the thin pancake with your favorite ingredients. Follow any basic crepe recipe just remember to let the batter rest in the fridge for about 30 minutes or longer before cooking.
A small crepe is about 45 calories, 1.5 grams of total fat, 0.5 grams of saturated fat, 5 grams of carbohydrates, 0 grams of dietary fiber, 1 gram of total sugars, and 2 grams of protein. I reduced the amount of sugar and butter of the original recipe. When making the crepes, brush the pan with a thin layer of butter. The crepe recipe can also be made with gluten free flour.

They are made with six whole eggs, half-cup of milk, one-fourth cup of diced red pepper and season with salt and black pepper. Bake in a muffin pan at 350 degrees for 30 minutes. It makes six egg muffins. They are perfect to eat another day if you have some left over.
Each muffin is about 80 calories, 5 grams of total fat, 2 grams of saturated fat, 2 grams of carbohydrates, 0 grams of dietary fiber, 1 gram of total sugars, and 7 grams of protein.
For a refreshing drink, think of spa water for moms with sparkling water, a splash of lemon juice, slices of cucumbers and fresh mint leaves. Use fruits to make other combinations of water.
