Martha Liao's potstickers:
- 1 lb ground pork/or ground turkey/or ground chicken
- 1 small Napa cabbage, chopped and drained of water
- 3 T chopped scallion
- 3 T chopped ginger
- 3 T chopped garlic
- 3 T light soy sauce
- 1 t sugar
- 1 T cooking wine
- 1 T corn starch
Mix above in big bowl with 2 t of sesame oil.
Wrap the meat mixture in wrapper available in all Asian grocery store.
Put dumplings in hot non-stick pan with little cooking oil. Add one cup of water, cover the lid and steam the dumplings till water is dry over medium high heat.
When it is done, the bottom is crispy and the top is steamed.
Serve with Chinese vinegar and hot sauce.
