Makes 28 cookies
½ cup (1 stick) butter, softened
1/4 cup brown sugar
¼ cup unbleached natural sugar
1 teaspoon vanilla extract
1 egg
1 cup plus 2 tablespoons GF flour mix or whole wheat pastry flour
½ teaspoon baking soda
½ teaspoon baking powder
a dash of salt
2 cups your favorite granola
optional: ¼ cup currants, ¼ cup mini chocolate chips
Preheat oven to 350.
In a large mixing bowl beat together butter, sugars, and vanilla extract on low speed. Beat in egg and continue to beat until creamy.
Add flour, baking soda, baking powder and salt and beat just until mixed.
Stir in granola and optional currants and chocolate chips.
Drop cookies by one level tablespoon onto ungreased cookie sheets, spaced about 2 inches apart.
Bake for 11-13 minutes until just barely browned on top. Cool for 5 minutes then remove to wire rack to finish cooling.
