A Taste of Colorado: 1,800 lbs. of cactus

Since Friday, people have packed Civic Center Park to sample dishes from some of the best and most well-known restaurants in the area.

Admission was free, but the food was not.

Meat and fruit shish-kabobs, rattle snake and alligator brats are just some of the more unique foods found at this year's Taste of Colorado.

On Monday afternoon the organizers of the event released their list of "festimates," or estimates for the festival.

The people this year ate:

• 57,000 ribs
• 62,000 ears of corn on the cob
• 43,000 lbs. of turkey legs
• 2,075 gallons of BBQ sauce
• 15,000 cups of Chobani Greek Yogurt
• 1,800 lbs. of cactus
• 121,000 tomato slices
• 16,750 slices of pickles
• 19,800 lbs. of shrimp
• 9,200 lbs. of chocolate
• 2,550 lbs. of goat and lamb
• 14,500 lbs. of chicken
• 750 lbs. of cinnamon and sugar
• 9,000 lbs. of potatoes
• 12,000 lbs. of steak
• 900 lbs. of cheddar cheese sauce
• 13,100 meatballs

They used:
• 3,000 Kinect for Xbox 360 "human controllers"
• 500,000 LEGO and DUPLO bricks in the LEGO Experience Tour exhibit
