Taco 'bout a great day

Co-owner of the restaurant, Gary Movell gave 9NEWS Anchor Gary Shapiro the history of the taco as he knows it.

"Tacos first appeared in Mexico, from what we've read, before the Europeans and Spaniards came to Mexico. So, we're looking at hundreds and hundreds of years ago," Movell said.

According to CNN's Eatocracy, Jeffrey Pilcher, history professor and author of Planet Taco: A Global History of Mexican Food, the word "taco" likely originated from silver mines in 18th century Mexico. Miners would use little charges, or explosives, to break up the ore they were mining. They'd wrap pieces of paper around gun powder for the job. Because of the wrap's resemblance, the taco took the name.

Movell says that tacos are made up of three basic components. The tortilla, the filling and the garnish.

"They are such a staple of our diet. There are so many of us that eat tacos on a daily basis. The diversity and variety is so overwhelming," Movell said.

The Blue Bonnet Cafe is a family-owned business that's been operating for nearly 45 years. Over time, the restaurant has evolved. Currently it's focusing on the more health conscious customer.

"What we've done is taken some historical recipes from Mexico and brought together some different tastes through flavors of chilies, like the habanera, or a fruit a salsa," said Movell.
