KUSA - 9Cares Colorado Shares Summer Drive is this Saturday from 7 a.m. to 4 p.m.! Any non-perishable food donation is accepted, but some are real powerhouses. Look what you can do with a humble can of black beans!
Uses for Black Beans:
Chicken Salsa Soup
Heat through a jar of salsa emptied into a sauce pan, then add rinsed and drained black beans and shredded rotisserie chicken. Add enough water to cover the beans and chicken to thin the soup as desired; season with fresh lime juice. Once the soup is heated through, serve topped with tortilla chips, avocado slices, and sour cream.
Cuban-Style Black Beans
Sauté chopped onions and green bell peppers in vegetable oil, then stir in minced garlic and cook for about 30 seconds. Stir in a little tomato paste to coat, then add rinsed black beans and enough low-sodium chicken broth or water to come just below the surface of the beans. Cook, stirring occasionally, until the beans are soft and the liquid is thickened. Mash some of the beans, if desired, then top with more chopped onion and fresh cilantro.
Black Bean Chili
Saute 1 onion chopped, one garlic clove chopped in olive oil 5 minutes until soft. Add 3 cans black beans, 1 can crushed tomatoes, 1 teaspoon cumin, 1tspn cayenne, half cup water, simmer 15 minutes serve with sour cream
Black Bean, Zucchini and Rice Skillet
Cook 1 cup long grain rice according to package directions. Saute 1 ½ cups zucchini diced, 1 green bell pepper diced, 1 garlic clove diced in oil for 5 minutes. Add 1 can black beans and 1 can diced tomatoes bring to boil. Reduce to simmer for 10 minutes and serve over rice.
