5 unique ways to use winter squash

Fall is the season to indulge in some of the best comfort food and freshest produce. The king of the garden... SQUASH! Here are a few unique ways to use your squash.

We have fallen in love with fall in Colorful Colorado. The nights are longer, the air is dry and crisp, and the decedent autumn colors are at their peak. 

Fall is the season to indulge in some of the best, comfort food and freshest produce. Casseroles, chilis, harvest salads... the list goes on. The king of the garden... SQUASH! It's everywhere and it's also at it's peak right now. Squash is packed with vital minerals, vitamins, and other nutrients so it's a no-brainier we should be putting it in everything this fall.

Winter squash is one of the most versatile veggies. If you've gotten in a squashy rut or can't eat your squash fast enough, we have a few unique ways to use and preserve your squash so you can enjoy it all fall and winter long. 

1. Squash Mac and Cheese

Put a savory, autumn spin on a comforting classic. Add a few fall favorites like onions, winter squash, nutmeg, and thyme. The kids will never know it's loaded with nutrients.

2. Slow Cooked Squash Cornbread

Turn a traditional southern comfort into every leaf peepers dream by adding squash to your cornbread. Putting your ingredients into a slow cooker locks in the moisture and adds extra fluff. It's easy to make and will surly comfort you on those crisp autumn nights.

3. Roasted Squash Hummus

Put your own spin on a traditional hummus by adding roasted winter squash. For an extra twist add some Greek yogurt and a drizzle of maple syrup. It'll be everyone's new favorite side dish.
