Healthy energy balls recipe

These energy balls will give you energy for your physical activity without all of the unwanted ingredients that can cause our blood sugar to spike and then crash quickly.

KUSA — Summer is here and that means camping, hiking, backcountry, and adventure.

Unfortunately, most products on the market that are meant to keep us "energized" and fueled are full of high amounts of carbohydrates and low amounts of stable, healthy fats and protein that keep us fueled for more than an hour or two.

When we eat carbs without good protein or good fats, it spikes our blood sugar. That spike can come down fast, giving us a "bonking" feeling, or a feeling of "hitting a wall".

This recipe is a modified recipe I found that anyone can do, is quick, easy and delicious, and full of good fats, proteins, and carbs.

It is gluten free AND dairy free, and most importantly, DELICIOUS for the whole family.

This is a modified version (I added protein and MCT powder to make this more effective) from Texanerin!

Recipe:

1 cup peanut butter (the kind with just peanuts and salt)

1/4 cup honey

2 teaspoons vanilla

1 1/2 cups gluten-free oats

1/2 cup shredded coconut

1/3 cup vegan (Enjoy Life) dairy free chocolate chips

1-2 scoops protein powder of choice (vanilla is best)

1 tablespoon MCT oil or powder

2-4 teaspoons of water

Stir all ingredients together, adding more water if too dry when adding the protein powder depending on how much you add. Roll into 1-inch size balls and chill, packing in a baggie for your next adventure!
