DENVER — The owners of a Michelin-recommended Denver restaurant plan to open a new concept in the city’s River North Art District.
Restaurant Olivia owners Austin Carson, Heather Morrison and Chef Ty Leon will open a new eatery called Emilia sometime next year, the Denver Business Journal learned on Thursday, April 11.
Located at The Current building at 3615 Delgany St., Emilia will serve up dishes inspired by regions across Italy. Meals will emphasize the Emilia-Romagna region in Northern Italy, known for its culinary and wine-making traditions and the creation of balsamic vinegar and prosciutto di Parma.
“While at Restaurant Olivia, we pride ourselves in blending Italian cuisine with global flavors, Emilia will be a pure tribute to Italy,” Leon said in a statement. “We plan to feature a selection of antipasti, handmade pastas and delightful dolci, including house-made gelati.”
Guests will also find some of their favorite Restaurant Olivia dishes at Emilia, but “reimagined with a twist that pays homage to Italy’s rich culinary diversity,” Leon said.
