Restaurant replacing Lauren Boebert's Shooters Grill gets liquor license approved

RIFLE, Colo. — A Mexican restaurant is one step closer to opening in the space previously occupied by Republican U.S. Rep. Lauren Boebert's restaurant Shooters Grill.

The Rifle City Council unanimously voted to approve a liquor license for Tapatios Family Mexican Restaurant during a Feb. 15 session.

Tapatios opened its first location in New Castle in September 2020. It's not clear yet when the new location at 120 E. 3rd Street Unit C in Rifle will open.

During Boebert's first congressional campaign in 2019, she drew national attention for encouraging the staff at Shooters to openly carry guns while working.

The restaurant, which opened in 2013, closed in July 2022 after the building's new landlord, Milken Enterprises, told Boebert her lease wasn’t going to be renewed.

“We were like a family,” Boebert said when Shooters Grill closed. “I would say Shooters, for any employee, was their life. We lived and breathed it every single day. They were a part of this culture and brand that we created in Rifle, and there was a lot of pride with that.”
